Huevos Rancheros with Chicken

I've made this dish before but this time I added shredded chicken to the mix. We had two leftover chicken breasts that I boiled for about 10-15 minutes and shredded by hand. This by far took the most time, haha. Otherwise, everything else stayed the same. I simply added the shredded chicken to the bean and tomato mix while that was cooking. I'm glad there was an extra protein punch because I only made enough for five servings. This should keep you full for a while. :o)
