I was itching to make something seasonal from scratch. I thought ginger cookies were pretty appropriate! The recipe called for a lot of butter and sugar - the cookies were still pretty soft after a couple of days. You can't taste much of the ginger though, so it's more like a sugar cookie with ginger rather than ginger cookies. I didn't have molasses so I substituted 1/4 cup honey. Thank goodness for Cook's Thesaurus!
